Ingredients

  • 1 cup creme fraiche
  • 4 fluid ounces dry sherry
  • 4 tablespoons mustard (dijon)
  • ground black pepper (freshly to taste)
  • 8 whole boneless skinless chicken breast (half)
  • 4 teaspoons dried, crumbled tarragon

Instructions

  • Preheat oven to 350°F.
  • In a 13 x 9-inch baking dish stir together all ingredients except chicken. Add chicken to mixture, turning it to coat well, and arrange in one layer. Bake chicken in middle of oven 30 minutes, or until cooked through.
